Butterscotch pudding

An incredibly simple steam pudding, cooked in the slow cooker. In winter we eat this almost every other week.

Recipe:

1 1/2 cups self raising flour (plain flour with 1 tsp baking powder per cup)
1/4 cup sugar
2 Tsp melted butter
3/4 cup milk

Preheat crockpot for 20 min (probably longer than it will take you to prepare everything else, but I just put everything in when I've done it even if it's not 20 min.)

1. Sift flour and sugar into mixing bowl

2. Combine melted butter and milk and add to the dry ingredients. Mix well and put in a dish that holds at least 5 cups, can cope with near-boiling temperatures (e.g.china or dishwasher-safe plastic) and fits in your crock pot.

3. Pour over sauce of 4 Tsp golden syrup and 1 Tsp butter mixed into 1 cup boiling water.

4. Place dish uncovered on a trivet or preserving jar ring in the crockpot. Anything that keeps your container off the hot base of the crockpot will do.

5. Cover the crockpot (don't surround dish water first or anything) and cook on high 2 1/2 - 3 hours.
