2 T cumin seedsToast and lightly crush cumin and fennel seeds and combine with remaining ingredients (salt may need to be crushed first if it's lumpy).
1 1/2 tsp fennel seeds
1 T garam masala
1 T mango powder (amchur powder)
1 T black salt (kala namak, note that this is really grey-pink, not black)
1 tsp cayenne pepper
pinch asafetida powder
1/4 tsp ground ginger
Makes a generous 1/3 cup.
