Milk masala

scant 1/2 cup (70g) cashews
scant 1/2 cup (70g) almonds
scant 1/2 cup (70g) pistachios
1 tsp saffron strands
1 tsp ground cardamon
1/8 tsp mace (or nutmeg)

Mix all ingredients and toast in the microwave in one minute bursts until you can smell them and they are brittle (around 5 minutes). Crush to a coarse powder in a mortar and pestle and store in an airtight container. Makes a bit over 1 cup.

Serve 1/2 tsp masala and 1 tsp sugar per cup of hot milk or 1/2 cup of yoghurt (use icing sugar instead of regular for the yoghurt - it dissolves better), or sprinkle over icecream.
